Will a sum of money normally deposited in my account on the 21st of the month still be deposited on this coming Monday-a bank holiday? Or will it be before Monday?

The Banks are closed on Friday and Monday (i.e. Bank Holidays, as it says) - so it might not go in until the 22nd.
Depends who it is from. My money always arrives early if the last day of the month is bank holiday.
Organisations like the Department for Work & Pensions (and some employers and pension providers) tweak their systems at Bank Holiday periods, so that any payment due on Easter Monday goes in on the previous Thursday.

However if no such 'tweak' is built into their systems, the payment won't go through until next Tuesday.
If it is a salary/pension payment it will most likely be before depending on the Company. If it a standing order being paid to you it will be after.
My small pension from my teaching days is due to be paid in on the 19th, which is this Saturday. I know that it won't be paid in until Tuesday 22nd.
