what realation is my mothers cousin to me, would it be great cousin, cousin once removed or second cousin and does anyone know the difference

sorry, just Google 'cousins explained'.
Your mother's cousin is your first cousin once removed. First cousins are the children of siblings, 2nd cousins the grand-children of siblings, 3rd cousins the great-grandchildren etc etc. The "once removed" part denotes the crossing of a generation. "Twice removed" would be crossing 2 generations (eg your grandmothers cousin).
