What is the best way of cooking a breast of chicken to keep it moist, apart from roasting? If it was a whole chicken I would roast it, but this is just a small piece. Thanks all

A good sauce smurf. I put chicken breast with my chosen veg in a casserole dish with a sauce, chasseur or coq a vin. Depending in the size of breast in to the oven for 1 to 2 hours. Comes out tender ans succulent.
Wrap it in tinfoil.
Poach it
What would you poach it in sycamore? Milk maybe.
A few minutes in a George Forman, then put in a dish in the oven with whatever sauce you fancy, to pour over and cover the chicken ..scrumptious, lovely and moist. Doesnt take long at all to finish cooking.
1-2 hours in oven - you must be joking! Slug of white wine, some herbs, *** of butter, cover dish in foil - 30 minutes maximum.

I poach large chicken breast in a light stock - you can add whatever seasoning you like, peppercorns,a clove or two, star anise, as I say whatever your taste.
I would carefully slice an opening into the breast, and make into a purse and then stuff it with Philadelphia and pine nuts/flaked almonds. Carefully wrap some bacon slices around it, and then put a couple of wooden cocktail sticks through, to keep it all together. If you chopped up a couple of dried apricots and mixed then in with the cheese, you wouldn't go amiss !

Put the breast in a shallow Pyrex dish and pour over a generous glass of dry white wine and then roast for about 40 mins. Absolutely delicious !

i wrap it in cling film and put in boiling water, simmer. add garlic, salt, onions, tomato to water for taste.
