Bought some lamb liver yesterday which I'm going to fry up with some onions for lunch. But what should I serve it on? Obviously it will be accompanied by a nice chianti, ffffff, lol.
Jennyjoan, I'll probably sauté some onions in butter and rapeseed oil then take them off and get the pan hot and simply pan fry the liver after seasoning. It only takes a couple of minutes. Then throw the onions and some parsley in at the end for a toss about. After that straight out of the pan and over whatever I'm serving it with.
Which as of yet is still undecided. I'm thinking maybe melba toast.
I hadn't cooked liver for ages until seeing this post, and it was on my mind all blinkin' week. Cooked liver and bacon last night with onion and cider gravy, served with boiled potatoes and veg. Darn, it was good. Also worked out as the cheapest meal I have done for a long time! Thankyou flobadob for reminding me of such delicacies!
I used to add other meat, such as chops, sausages or kidney to serve with the liver - but it doesn't need it.
