Can anyone tell me the cheapest way to travel from Plymouth to Eindhoven in February? I've been told that Eindhoven is a train ride away from Amsterdam.

The return rail fare from Plymouth to Exeter is £21.50 (peak) or £17.60 (off-peak). It might be possible to save a bit of money by purchasing two 'Advance' single tickets but that could be risky, as a delay in your return flight could mean that you'd miss the only train that your ticket was valid on.
Return flights from Exeter to Amsterdam are typically priced at around £85 to £95 in February:

Travel from Amsterdam Airport (which has its own rail station) to Eindhoven takes about 1½ hours, with a change at Utrecht Centraal. The fare is €19.40 each way:

Alternatively, if you don't mind a long coach journey, National Express can get you to Stansted Airport for (typically) between £47 and £61 return:

However, if you're going to have a long coach journey anyway, you might want to consider using National Express/Eurolines all the way. You can do that for just £56 return. (National Express link, as above).
For the removal of any doubt, Mushroom25 has quoted single fares (because you only asked about getting to Eindhoven), whereas I've quoted return ones (because I thought it likely that you'd also want to come back!).
