Well Prudie you know - I have whisked them for 20 years now and they were never erect but they were pretty good - ie everybody ate them - tonight - in the deep dish they stood like queen's soldiers LOL. And I was proud of them.

JJ I was going to add I'm sure they taste as good whatever. I suppose it depends how you like yours to turn out. I also make meringues, it's one of the few bits of cooking I do, but mine are light and crisp all the way through but with a chewy centre.
