Eurostar Booking Seats

I recently travelled to Paris and back on Eurostar with backward facing seats. It doesn't bother me but on both trips I thought I would be facing forward from the train diagram.
A friend (who suffers from travel sickness) and I want to book a journey in May 2015 with Eurostar but I understand that we can't book a set of the seats with a table (this would allow her to have a forward facing seat regardless) until we have paid. But they always seem to be blanked out on the seating plan no matter how early you book. Any thoughts?
