... neither is pickled pig's feet and on suggests "bull's testicles" when in fact they are a common occurrence here in the western U.S. but mainly in the spring when the calves are sorted and the young male calves (certainly not 'bulls') are castrated... actually quited delicious.
Our neighbors who raise sheep are equally as fond of lamb's cuts and I've tried young pig's all tasty but very rich. All of these muste be prepared at corral side preferably in a large cast iron Dutch Oven over a hot but low, wood fire tended by Aunt Margaret and her cohorts... with all sorts of side dishes brought in by the neighbors...
