I just don't get why it's 'beef'.
Dairy (milk/cows) herd and beef herd (mainly male)
I don't get why it's beef either. Psybbo's explanation may be right but seems very obscure.
I assume it's this crossword, in which case I agree with your letters b?e?

The clue has a comma after 'cheese', if that makes any difference.

I can't improve on BEEF but if that's the answer it seems a pretty weak clue

Cheese can have other meanings - sentimental, a big cheese (powerful person), to stop; desist or to act in a grovelling manner, but i can't think of a suitable opposite. It may even be to do with saying 'cheese' for a photo.

It could relate to chalk but i can't see anything yet
often 'chalk is referred to as the opposite of cheese (as different as chalk and cheese). How you get B-E- out of chalk beats me though.
Cheesecake was an old fashioned word for photos of attractive women and the opposite, beefcake, for pictures of men.
I think Sandy has it.

Cheese and beer as opposed to cheese and wine?
What does the 'in a sense' bring to the clue?
Only in the sense of 'glamour' pictures could cheese be considered the opposite of beef?
