Salmon And Stir Fry

We're having the above tonight.
The salmon will be cooked separately, kept as a whole piece and not flaked into the stirfry. I'm just looking for some inspiration for a tasty 'sauce' to chuck in the stirfry that will go with/compliment the salmon...any ideas?

What I often do, and the whole household love, I fry some fresh ginger, chilli and garlic. Add some stock (I just use a veg stock cube) some soy sauce and brown sugar and simmer. Then add veg. I think doing it as a stir fry would work just as well.
Cook some noodles and add to individual bowls, spoon the stock and veg over and place the salmon fillet on top.

I'd go with.....
11/2 tbs Soy sauce
Scant tsp grated ginger
1 small garlic clove, minced/grated/crushed
Juice 1/2 lime
Finely chopped red chilli to taste
A touch of sesame oil....if you have some
A tbs sesame seeds ....if you have some
A touch of honey or soft brown sugar if it tastes a bit too tart
Whisk it all together and pour over the stir fry towards the end.
Serve up the stir fry and salmon, leaving the residual sauce to reduce a little. Pour the reduce sauce over and sprinkle over a few more sesame seeds....if you have them....

Do stir-fry sauces always have to be sweet? I would love to try one but all the ready-made sauces are sweet and I really don't like sweet on my savoury (although I don't mind savoury on my sweet...). I tried a ready-made sauce once, I think it was just soy, but even that was too sweet. Now I've said sweet too many times.

Am giving a combination of ummmms and eccles's a go. Hadn't thought of black bean with salmon Jim, I do like black bean sauce so why not?
