The same thing happens when someone recounts a story that conflicts with their preconceived ideas. My collection of thousands of press cuttings proves that truth is stranger than fiction. For example, would you believe that a man of 92 had to appear at a discipline hearing for fighting in his local club? He was an ex-Royal Marine who had survived Gallipoli and the Western Front and his decorations included the Vimy Ridge bar and the Mons Star. He commented "They say I hit three people but I only remember the last one - and he was as big as three". At his age it must be untrue, but it isn't.
I think because you cannot see people and their reactions, it's hard to make it believable, although I'd never really thought about it before reading your question.
I have also never lied about my appearance, as I've never been asked to give it. I'm 5ft 4" with short brownish hair and blue eyes. (Plus I'm only 15)
