Does anyone have a tried and tested recipe for pesto.I've tried Delia's and the BBC good food recipes but they all seem bitter, nothing like the fresh ready made that you can buy in Italy, all help appreciated,

25 g. basil
20 g. parsley
85 g. Parmesan cheese
85 g. pine nuts
2 cloves of garlic
125 ml. olive oil
salt and pepper
Put all dry ingredients in food processor and slowly add oil till you get desired consistency. Adjust seasoning - I find it needs extra salt.
I don't use extra virgin oil and have used half sunflower oil and can't taste any difference. Also when short of pine nuts substituted a wholefood seeds mix.
Have kept this successfully in fridge for couple of months making sure it's topped up with oil after use.
