A traditional sunday roast with chicken, lamb, beef and pork is good.
A nice "specials" board with a few nice recipies on such as duck or pheasant or guinnea fowl would be nice.
A good variety of made to order bar snacks such as cheesy chips, garlic bread, bagguettes, sarnies etc
But i think that the most important thing is the attention to detail. Give the customer what they want ie a good variety of spuds/chips, veg/salad and beans/peas etc.
If you skimp on that, the food will look terrible. Home made food will always win over the customers too.
A good kids menu and the chance of having a kids size adult meal is a benifit too. make things fun for the kids and the families will flock to the pub.
Also....serve it with a smile. There's nothing worse than going to a lovely country pub with the family and a few other families only to be greeted by miserable old gits who just throw your food in front of you and are rude.
What I really hate to see is lasagne! It is usually done badly and a real excuse for heating up something frozen.
I like to see a good choice of children's food and an option of them having a half size adult portion from the adult menu. A good roast should be accompanied by three vegetables. Jacket potatoes should always be oven baked and come with an interesting side salad, not just a lettuce leaf and a slice of cucumber.
Good options are steaks with differen flavoured butters, such as blue cheese butter, or herb butter, melted over the top, a piece of grilled fish, a meat pie (home made of course) and maybe mousaka.
Do you run a pub?
