African recipes

I am off to Kenya for a holiday in a couple of days and the folks at work would like me to cook an African dish for them when I get back. In case I don't find a suitable dish out there for me to cook once I get back does anyone else know of a suitable dish??

You may be constrained by the availability of ingredients though, so maybe check that the things you need are available. There are a lot of good ethnic stores round the UK as well as more delis offering imported sauces / seasonings and foodstuffs, etc, so you should be able to find what you want.
