Hello folks, Does anyone have any interesting ideas of what to do with oatmeal other than porrage. I quite fancy meaking some flatjacks but not the soggy ones, Id quite like them to be a bit crispy and chewy. Any favourite recipes out there that I could borrow. X

Chronachie. I'm not sure of the exact proportions, but it has a fairly loose, fluffy consistency when finished. I guess you just mix it to taste:

Oatmeal
Whipping Cream
Fresh Strawberries (or Raspberries)
Whisky
Brown Castor Sugar

Whip up the cream. Mix in the sugar, oatmeal and whisky. Finally, add the chopped up fruit.

The above recipe sounds very much like 'Cranachan', a yummy scottish dessert. If you are going to try it I'd suggest toasting the oatmeal slightly, just under the grill for a few minutes (keep an eye on it, burns very easy!), and use Drambuie and honey rather than whisky and sugar! Mix altogether to make a yummy mess and serve with shortbread. I can't remember the exact proportions, (the recipe's at home) but I'm sure a quick search on Google would find many examples.


I've also got a tasty one for flapjacks, some butter, honey and raisins, mind you those ones are quite chewy! I can check tonight and forward you them if you'd like?

If you have the time, try these cookies (biscuits?). They're some of the best we've ever made:


Cream together:
2 cups butter at room temperature (do not melt the butter beforehand)
2 cups sugar
2 cups brown sugar
Add:
4 eggs
2 teaspoons vanilla

Mix together:
4 cups flour
5 cups quick-cooking oatmeal (measure first and then blend to a powder in food processor)
1 teaspoon salt
2 teaspoons baking powder
2 teaspoons baking soda

Mix together all ingredients and add:
1 bag chocolate chips
1 Hershey Bar (8 ounce), grated
3 cups chopped nuts (We prefer pecans or walnuts)

Place on ungreased cookie sheets, making golf ball-sized cookies. Place 2 inches apart and bake at 375 degrees F. for 10-12 minutes.
Yield: about 112 cookies.
This is a lot of cookies and you may wish to halve the recipe. Additionally, when I posted this previously, ya'll didn't know what a Hershey Bar was. It's a simple milk chocolate bar made in Hershey, Pennsylvania, but apparently not marketed in the U.K. Any similar, unadorned milk chocolate mar should do.
