Does anyone know if there is a legal time limit between the date of being caught by a speed camera in the UK and the date of receiving a fixed penalty notice (60)?

i believe unless you were verbally warned at the scene of the offence a written notification must be served within 14 days of the offence occurring
this is true although i have heard that these 14 days may not include weekends so 14 working days (not 100% sure though), but leave it 3 weeks and you should be fine

Or better still, learn to drive properly, i.e. within the speed limit, and this won't ever be a problem.

Speed cameras - I love 'em.
