I'm going to be cooking chicken breast in plum sauce with stir fried egg fried rice.
Got the rice sorted but not sure what i could add to the chicken/plum. I was thinking some spring onions, finely sliced peppers, maybe even some finely sliced bits of pineapple ?
I tend to associate plum sauce with dark meats (such as duck). I'm not really sure how well it would work with white meat. However, since you're going to try it anyway, my instinct would be to add some ginger to it (and definitely avoid the pineapple!). Also beansprouts, perhaps?
Got any of those finger sized mini corn on the cob things you could chop up and add, and mange tout or sugar snap peas? Or a handful of ordinary peas. I like to add a chunked up ordinary onion to dishes like this too.
And could I have some please, sounds scrumptious.
Are you maybe thinking of crispy duck with hoi sin sauce, birdfeeder? We're having that tonight, with pancakes, cucumber and spring onion.
Plum sauce and hoi sin sauce are similar but different.
I'd definitely add spring onions and peppers - maybe mushrooms too if they are to your taste. How do you make the plum sauce, Hammerman? (or is it out of a jar -shock/horror!)
