Leaving Emails on web browser in Windows Mail

I used to use Outlook Express and could leave all my emails on my web browser/server. I now have Windows Mail in Vista and wondered how I can do this.

Toolbars on My Documents

When I open up My Documents on my computer I seem to have lost the bits at the top i.e. toolbars, etc. I cannot click on File - Toolbars because this is missing. How do I get them back. Thanks
