change of holiday destination

i have a holiday booked for october have paid the deposit, is it possible to change the holiday to say the same country (in this case greece) but to a different resort?

i fancy going to either mexico or cuba to do some scuba diving in october / november / december... which ones best - any recomendations for areas to stay, hotels, excursion companies etc, also whats...
