I would like to know how much it would cost me to keep a horse these days? Also can you get horse insurance to cover vet bills etc?

Take a look at question 17804 You can get insurance and it will cover Vets bills BUT it does not cover the normal day to day Vets bills ... it covers things like illness and accidents not innoculations etc.
