Does anyone know why humans don't eat these birds?

Probably because we don't need to. There are other, more palatable foods.

Some western cultures do eat seabirds as a delicacy, such as Iceland where they east smoked puffin and guilliemot, and the Western Isles of Scotland where they still eat the guga - steamed gannet chick. The meat is described as very oily and very fishy - an aquired taste.
Probably taste nasty... inland gulls are scavengers - like City Pigeons... I wouldn't eat one of them either...

Well all that jogging,will give you muscles.

You could always marinate her in olive oil,,that will make her a little more tender .Then slow cook in the oven for 3-4 hours.
