Why do most dialogue have a capital letter as the first letter of a line but some don't? What's the significance?

The answer to this one is quite plain,
Please allow me to explain....
You start each line
With a great sign
Unless the line goes on and on for such a length of time that the line that you are reading goes on to the line beneath when writing verse or some quatrain.
