As per my earlier question, answered by the indefatigable Incitatus, how do you get to be a ghost writer, then? Sounds like a cracking job.

It's a case of 'who you know' - often ghost writers are chosen by the book subject, based on a personal or professional connection, or in some cases, and author may be approached by a publishing company, on the basis that the author's previous work makes them suitable for the project in mind. Unfortunately, it's not a job you can pick up easily, or lots more writers would be doing it!
