on police programmes they always say that the car stinks of cannabis.

Slightly sweet herbal and heady and depends on the mix the person is smoking it in.

It depends what type, 'domestic' (ie 'standard' weed) - to me - has hints of coconut. Hashish (black, moroccan, leb) has a garlicky scent. Skunk though is more pungent and smells a lot like hops - not surprisingly perhaps as they're in the same family of plants. As Erin says, it is hard to describe. It's a nice smell afaic.
