How can I find out who actually owns a particular business if I no longer wan to deal with the manager.

The licencee isn't necessarily the owner, only who holds the alcohol licence. Have you tried Googling?

Licensee name is on the front page of the restaurant website

Licensee may not be the owner though, as it's part of a chain the owner will be the company - and it sounds perhaps as if you need their complaints department, granny?

send a letter of complaint to the licensee, copy the Director of Operations of Cloverleaf or if it is really bad the MD......thereby you put the pub in the shyte but they have the opportunity to redress you.
