Well I'm not sure about legally, but, morally, if I was expecting him to fulfill his responsibility by paying for his child, then I would think he has a right to be written down legally as the childs father. You can't have your cake and eat it. Think about this, when your Son is older won't it be good, or useful for medical reasons to know who is biological father is, even if someone else does the parenting job?
an entry in the register cannot be changed unless it is because the child was adopted, or because the parents married within the life of the child or a baptism name was added to the registered name within the first 12 months, i think that's right, but ring the regsiter office to double check.
as far as i am aware both parents have to attend at the time of registration if they are not married, and a certificate is issued which is a certified copy of the entry .
