I've Been Given
a bottle of Mateus Rose. It's so long since I've had it, do I chill it?

White and rosé wines require light chilling only. Far too many people leave them in the fridge until they're at the same temperature as the fridge (which destroys much of the flavour). Fridges typically operate at between 2C and 4C; white and rosé wines need to be chilled to between 7C and 10C.

DON'T OVERDO IT!!!
It actually takes quite some time to reduce the temperature of that volume of liquid. (Think how long it takes to make ice in a freezer). An hour should be OK to get it down to a reasonable temperature (assuming that it's not really warm to start with of course!) 2 hours might be better but don't, for example, leave it in the fridge overnight.
