I have a reasonable size of collection (about 20 bottles). They are stored at room temperature and all are open. Will they start to deteriorate in time? So should I be aiming to drink them as quickly as possible?!

Yes.
2 years apparently is about the maximum.
I think I read this in Iain Banks Raw Spirit book and he should know. Worth a read that btw. He goes on about his cars a bit but apart from that its ok.
