Traditionally its because jesus fasted from ash Wednesday onwards, and christians did the same, so they used up all the ingredients in their house and made it into one big pancake

In France it's known as Mardi Gras (fat tuesday)presumably on the theme of an end of fast cook up. Pancake day as a child was a big event and you had to force your mum to make as many as possible to give you boasting rights at school the next day. There was also a traditional pancake race through the local shopping centre where women had to continuously toss there pancakes. happy days
