Doing dinner tomorrow night for myself, my mother and OH's parents (OH working). It's the parents' first introduction.

3 meat eaters, 1 vegetarian.

or

4 fish lovers but 1 hates salmon.

I want to cook something impressive, but don't want to spend all day in the kitchen.

Would appreciate any suggestions.

luxurious, creamy cheesey fish pie
Why not make a big fish pie that will satisfy everyone, prepare earlier in the day and then its just a case of in the oven when they arrive.

That was one of my thought but 3 of us love salmon and 1 doesn't. I personally don't have any time for cod, haddock, mackeral, etc, so usually stick to just prawns and salmon. I suppose I could always make a large one and an individual portion sans salmon.
smoked haddock, its the only way forward, and with ickle hard boiled quails eggs

am i going way over the top here?
I didnt see your answer mccfluff and now ive just read you other post which makes me look stooopid for suggesting fish pie when obviously that should be your suggestion!

Monkfish is the answer.
It has only one huge bone down the centre and is the best tasting white fish there is.
Wrap it in parma ham and bung it in the oven for 15 mins. Seemples!
PS - leave off the parma ham for the veggie.

Plan B is to make a cottage pie with veggie mince - I cant tell the difference

I would love to do Paella, Fluffy, but then I'd have to go and fetch my paella dish and I've enough to carry to the train station as it is. Donut left his stuff here last week and so I've got to carry all that too.

Puklavec and cheese straws it is! lol
Iced melon with ginger to start, then

Cook a chicken with herbs, garlic butter, fresh lemon dress it up on the table with watercress and fresh herbs, lemon wedges etc, a nice fresh crisp salad, jacket potatoes, or noodles and /or some good sour dough rustic bread and for the veggie, just put a quorn fillet in the oven the last twenty minutes with the same herby garlicky lemon saucey dressing over it. Lemon and olive oil vinaigrette on the salad

Fresh strawberries and Ice cream for pud

oh bugger didn't realise your heading down thataway. well your on the cost got to be something fishy, get some mussels do moules mairnare (sp) lots of fresh crusty bread, big bowl of salad and some fruit and cheese to finish up with. dead simple but looks good

oh and wine, lots of wine :-)
