Does anyone know of any reason sugar would be a 'necessary' ingredient in cheese? I found a few cheeses that contain sugar, and the shop I bought them at assures me they only add sugar when it is needed for an 'authentic' flavour.

It was only stated as 'sugar', but my impression was that that meant 'added'. This was in a Davidstowe with onion and chives, and a Cornish cruncher with chilli.
