Toasted Sandwiches

Saw an earlier thread about using a toasted sandwichmaker and this set me thinking in Ireland you can get a Toasted special cheese,ham,onion and tomatoe.The OH makes these for us and they are lovely.
When I lived abroad a neighbour used to make toasted sandwiches with a mashed potatoe,corned beef and onion, tried theese too their good.
Any other wierd fillings?
