i made a fish kerala curry last night. i made the sauce first which included light coconut milk. i then added some red peppers that were sprayed with oil and quickly cooked in the microwave, then i added prawns, hake , salmon, a few scallops and a bit of chilli. mixed it all in the put it in the oven. when i took the curry out the sauce seemed to have split. my guests said they loved it, i just hope they didnt notice. so what made it split?
That seems a bit strange. I can`t think why it would separate. The only thing I can think of is that that light coconut milk is really just 50% coconut milk and 50% water so in reality there is no such thing as low fat coconut - just watered down coconut. I would never cook it in an oven either. A Wok is normally the way to go.
i wanted to have it ready when got back from pub so cooked sauce in advance then put other things into sauce then into oven to cook through for about 40 mins. it still tasted very nice but weird how it went!
You may have been better off using a block of creamed coconut-adding it in at the later cooking stage-it would have thickened the sauce nicely. Also-coconut oil and the creamed coconut is a healthy fat-and is metabolised very quickly-unlike most other fats. So go for the full fat next time.
