vegans should be given a honey + mustard glaze then grilled slowly over a log fire.

Unfortunately I can't offer any useful suggestions either. Some vegans can be extreme. Do you know this person?
I believe some of them will not eat anything that has been cooked in the same pans as any of their banned foods so JJ's option may not be suitable either.

This might help. I searched for +vegan +recipes. Got quite a few hits

Soya mince = chilli, spag boll, shepherds pie etc. Holland and Barratt are very good in their freezer section for ready made meals. Any kind of vegetable soup as long as there's no dairy and if you serve bread you'll need soya spread. If you do decide to grill them over a log fire remember - no honey! xx

I did tiggs, and she said she likes vegetables. That was a massive help lol
I can sympathise with people with special dietary requirements.

I only eat lobster, fois gras, and chateaubriand.

Bear it in mind if you invite me for supper.
Most dried pasta`s vegan. You could do a nice bowl of that in a tomato and basil sauce (not pesto because it has parmesan in). Or butternut squash pasta. With a side salad (olive oil and balsamic dressing)
Vegetable casserole, you can make it in advance and just reheat it.
Serve with jacket or mashed potatoes, or crusty bread.
