Can anyone recommend a good set of Kitchen Knives?

For more on marking an answer as the "Best Answer", please visit our FAQ.Be warned with Sabatier - there are many different qualitys. Sabatier is a licenced name, not a brand so you can get various qualities (though there is a minimum quality).
Another good name is Victorinox - these are used a lot by professionals. Global look very fancy and are a great knife (but only if you know how to use them).
I wouldn't be without my Wusthof's. Expensive, but well worth it. They now also do a Global-type range of solid one-piece knives ('Culinar', i think it's called), but I haven't tried them.
Go to a good cookshop or department store and try different types out - check the balance and see how they feel in your hand. I personally don't like Globals because they don't feel right for me, but I know others who love them. Go with what's feels right for you !!
(Just like to add my agreement with the 'beware of Sabatier' point - they are good knives for the real thing, but too many cheapo versions out there.)

I've had my set of Wusthof Tridents for more than 10 years and they are still going strong. You get what you pay for and a decent set are well worth the dosh. Dont put them in the dishwasher it blunts them and dont sharpen them all the time just hone the edges and they will last you 20 years! You want knives that feel great in your hand so its worth trying them in a good Cooks shop. Also go for a full tang not a seperate handle and blade. Happy chopping!
Quality cooks only use plain edge knives and always resharpen them, altough many are not as good at sharpening as they should be. A sharpening steel is OK for the first year of life, but after that they will need resharpening professionally every year or so.
