I'm with vodkancoke, but I find that a Thai green curry paste/mayo combo is a must have with fish cakes of any sort/country of origin and other tasty fried morsels

Well i certainly have more than enough ideas to to give me a mighty range of mayo's now so thanks for the tips guys.
One more question, do any of you make your own mayo from scratch, any tips or is it easy?
i really fancy wedges with garlic mayo now
I like a bit of English mustard mixed in with mine.
It's very easy. I make mine a lot and it keeps really well in the fridge.:

2 egg yolks
1 whole egg
1 tbsp French mustard
½ lemon, juice only
½ tsp caster sugar
400ml vegetable oil
Salt and freshly ground black pepper

Blend everything except the oil in a food processor. Once blended, keep the processor running and very slowly add the oil. Don't add it too quick or it may split. Keep mixing slowly until it is thick and glossy. Keep it stored in the fridge in a screw-top jar. :)
It is easy enough oldjonno, it is very easy to make a mess of. Unless it was a show off occaison I would stick to a good shop bought variety and add to it as I wanted
I don't no, bit too much faff involved in making your own for my liking.
everything at the same temperature and add the oil, very, very slowly to begin with.
ground chipotle pepper doesnt cost that much.....

yes, easy to make as long as you respect the rules mentioned - same temp and very (in italics) slow in adding the oil......the same for successful, moist cakes when you add the eggs really (in italics) slowly......most people are far to quick,
