Melt a good knob of butter in a non-stick pan.
Lightly beat your eggs adding ONLY pepper.
When the butter just begins to bubble add salt to the egg and straight into the pan.
Stir often until it begins to thicken, when it is almost at the consistency you prefer, (I like soft but not 'set') take it off the heat and continue to stir as you serve.
I don't add any extra fluid at all and the salt only goes in at the last moment because it causes the egg to 'split' if it sits in it for any time.
