Ceramic knives.

I was thinking of buying some ceramic knives as my steel ones always seem to blunt really quickly, even though they were really expensive, what does anyone think of ceramic knives?

Ceramic knives have an excellent reputation but, as pointed out, they are susceptible to damage if dropped. There is nothing wrong with steel cutlery, proving it is the right sort of steel.
Stainless Steel looks very attractive and will always retain that pristine finish. Unfortunately, Stainless Steel is a very soft steel, and is useless for keeping...

If your steel knives are going blunt it is because you are misusing them, not sharpening them often enough or not sharpening them correctly or they are not good knives.

When I see the professional Chefs and Butchers using ceramic knives then I will be tempted to try them my self.

Until then, learn how to sharpen knives correctly would be my advice.
To add to Ratters, or get them professionally sharpened....and perhaps take a lesson from a friend. It's not embarrassing - many folk do not know how to properly and safely wield a kitchen knife. Well worth learning though.
If your knives are blunt I would take them to your butcher and ask them to sharpen them for you. To try and get an edge back on a blunt knife is nye on impossible. Once you've got a proper edge back then maintain it with a steel every time you use your knives.

Ceramic knives do hold a good edge but they are very brittle and can break easily if dropped or misused.
Ratter, my brother in law who is a chef says the ceramic knives are great, especially for hygiene reasons, they are supplied for him at work along with normal stainless steel ones, he still uses Sabatier metal knives at home though.
I have two ceramic knives (not the very pricey ones but cheapo ones that Aldi had as "specials" last year). They are very good and are still as sharp as they were when brand new. However, you need to be aware when using that they can be damaged if dropped.
I invested in a stone sharpener & it's the best thing I ever did. It took a few 'goes' to do it but i've mastered it now - a good sharp razor edge blade that is like a hot knife through butter.
never had a ceramic one so don't know what it's like.

Maybe that is where I am going wrong as my cutting board is glass!
