Chicken and chorizo

I promised my parents I'd cook dinner for them tomorrow night and as I bought chorizo today I was wondering if anyone had any easy recipes for a casserole-type dish with chorizo and chicken.  Do you think those two flavours will go together ok?

Try taking chicken breasts, opening them up and stuffing them with diced chorizo, strong soft cheese (Stilton) and walnuts. Wrap in bacon and bake in the oven. You can bake in a caaerole with a tin of chopped tomatoes poured in the bottom which you can season and reduce down at the end and pour over or serve as a sauce. Dead easy to do and very impressive. Chicken stays together and very tender. Hope this helps.
I was gonna suggest the recipe Gef has posted the link for, my mum makes it and its very nice and if theres any leftover you can eat it cold, also nice =)
Chorizo is a fantastic food. Try it diced, fried with some diced peppers in an omelette
  1. Season biggish chunks of chicken breast with salt and pepper. Brown in plenty of olive oil and remove from pan.
  2. Saut� chopped onion, celery, carrot, garlic.
  3. Add sliced chorizo (wise choice, maxd), cumin, cinammon and bayleaf. A bit of chilli wouldn't do any harm.
  4. Deglaze with red wine, balsamico vinegar, tin of tomatoes.
  5. Return chicken pieces to pan and simmer gently for about half an hour (or longer), adding some chickpeas just before it is ready.
  6. Garnish with coriander.
Ooh, I'll tell you what would go nice with chicken and chorizo - mozzarella. I can just picture a nice chicken breast, topped with big slices of chorizo and smothered(and grilled) with thick mozzarella.

Well, I cooked Xollob's recipe without the celery.  I have to say it was fantastic.  The chorizo added a bit of interest but wasn't too overpowering.  I'll definitely be trying out the other recipes you all suggested now I've acquired a taste for chorizo.  Thanks guys!
