Giant veg and bird cooking times

Hi, I will be attempting a world record in a few months for worlds largest roast dinner. Has anyone got any ideas for "Giant veg"? The gravy, yorkshire puddings can all be made larger and in larger volumes but am finding it hard to think of giant veg, we've thought of using giant roast pumpkins as the "potatoes" would the skins be edible if roasted? Also instead of a chicken we'll be using a whole ostrich, so any more ideas would be welcome.

The same vendors that sell ostrich steaks boo the internet has made everything so easy and accessable, I could order a whole alligator and have it on the barbeque this evening if i wanted! I'm currently awaiting several emails regarding price as we speak.

Kristal we'll be cooking this in a giant purpose built oven which we haven't built yet but I have enquired about how to build it here.

Most definitely cabbages as sprouts, how big could I make yorkshire puds and what should I use as a dish so they keep their shape?
Just had a brainwave about the roasties, would it be possible to make a really think mash and use some kind of weak tasting brown edible foodstuff, (seaweed maybe?) to then cover the roasties so they look authentic?
