I'm an ex School meals cook and this was one of our most popular (and easy) dishes.  All it basically consists of is a pre-baked sweet pastry base topped with condesed milk which you boil or steam unopened in the can for appx 2 hours beforehand, and allow to cool till totally cold, dont worry about over steaming as it doesnt burn easily in the can.  Finally sprinkle some chocolate hundereds and thousands over the whole thing.

..we used to call this Gypsy Tart at school...if you slice bananas on the pastry case before pouring on the boiled condenced milk, you have a scrummy banoffee pie...yumm..

even easier recipe which i use was handed to me from the ex head cook with kent county council which is to chill 1 can of evaporated milk in the fridge for two days.

open the tin and beat into 12oz soft dark brown sugar until it goes a pale straw colour9takes about 10 minutes on an industrial machine so allow plenty of time)

then pour into cooked pastry case and bake in a low oven for about 6 minutes until just set

keep an eye on it, cook it too long and its only any good for the bin

enjoy and dont be sick it is very rich
