I can imagine that a thin layer of pesto would be quite tasty instead, or a layer of finely pureed onion & garlic, to give texture and moistness (is that a word ?!)

Yes moistness is a word (in my dictionary anyway). I should know - I couldn't read, hear or even THINK about the "m" word for YEARS without it sending shivvers down my spine. Used to freak me out!
Mmmmmmmmmmmmmm pizza - all sounds yummy to me. I suggest you make enough for more than just your friend with the allergy - I think everyone will be fighting over these new pizzas! :-)
