Turkey Leg and Turkey Mince burgers question
1 Answers
Q-1 Yesterday i took the good part of an hour trying to cut meat off a turkey leg, the main problem was my rubbish knife and also the membrane, sinew and stuff which i can remember one of the chefs saying that it shrivels up and turns the meat tough, so after all that I ended up with not much meat but it was soft, juicy and melt in then mouth once i steamed it.
I have 2 more turkey legs in the fridge and will NOT be going through that process again so is it possible to steam the whole leg and then take the gristle, sinew and membranes off after or do they then turn the meat tough which is then irreversible?
Q-2 is that i have turkey breast mince and i want to make burgers with onions and kidney beans, so do i cook the kidney beans and onions first and then add to the raw meat before cooking and do i need to add an egg? ( I have 500gms and want to maybe make two 250 gm patties or maybe 4 12gm patties?)
Q-3 have you got any ideas for what to do with turkey mince?

A few hours in a slow cooker will result in meat that falls off the bone.
You shouldn't need to cook the kidney beans-I'm assuming they are tinned. You can lightly sauté the onions-then let cool before combining with the raw mince. and some chopped fresh or dried herbs and maybe some breadcrumbs. An added egg is ok-it will help bind the meat and keep it all moist.
You can use turkey mince for any other kind of mince including beef, lamb or pork...burgers,meatloaf,cottage pie, mince and onions.
