I was wondering if any of our AB members living near the sea might have ideas of useful things to do with a mackerel.

I thoroughly commend WHU010's approach to mackerel cooking. I wouldn't bother with the breadcrumbs but that is a matter of taste. Mackerel are delicious, they only need simple cooking but I always fillet them because I dislike fish bones and mackerel do have some really lethal bones.
PS. They are best when they are very fresh.

You could make Mackerel pate. But the recipe that whu010 has given you sounds rather nice :)
You do not to do that with a Mackerel. You slap people around the ears with a half witted kipper.

a half witted kipper would be better. but your choice. anyway could you tell me why you would want to do such a thing.It will not taste any better for that when you cook it :)
Handy tip # 1 for alternative uses for mackerel

Mackerel and Grapefruit salad

make sure it's ultra-fresh. You can cook the mackerel whole, just as they are, or split them by cutting them through the belly with a sharp knife towards the back bone either side of the main bone structure then just snipping the bones and fins off with a pair of scissors to form a butterfly, like a kipper.

4 mackerel, weighing about 400-450g
Flour for dusting
Salt and freshly ground black pepper
A couple of tablespoons of olive oil for frying

For the salad
A couple of handfuls of small salad leaves
1 grapefruit, segmented with the juice reserved
1tbsp olive oil

Season the mackerel and lightly flour the skin side and brush with oil. Grill the mackerel on a medium grill for 3-4 minutes on each side.

Meanwhile mix the grapefruit juice with the olive oil then toss with the segments and leaves. Serve the salad with the mackerel.
