Clanad's answer about collard greens on another thread set me thinking about this. So, for starters, how do you make corn bread and what do you eat it with? Ditto grits??
if you want to spice your cornbread up....sweat a large onion (finely chopped) and 3 chopped green chillies and add to the mixture with freshly squeezed lime juice (1 or 2 depending on taste and size of bread) before baking....is super yummy!
Apologies for delayed answer 237SJ... I've never tried it in a bread machine, since our kitchen is devoid of one... any flour will do... cornbread is not fussy! I'd try the recipe without any flour and an extra egg for historical accuracy...
