Rib of Beef

We are having rib of beef tonight (on the bone) How can I cook it perfectly,its a real treat so don't want to mess it up.

correct. If you get reddish fluids running out on rare or medium meat, it has not been rested properly.

Put it on a trivet in your roasting tin with some water in the bottom, if it is very lean cover it with extra fat,finally cover with foil and roast slowly,basting every so iften, dont rush it ,leave for at least half an hour before carving.

Of courseI've got a bottle(or) two of red.And for dessert Syrup sponge and Clotted cream and golden syrup ice cream.I can't remember the last time we had rib at home,it was expensive but what the hell. Incidentally he will be away for Christmas and our silver wedding anniversary so we have to enjoy the next few weeks.
