Freezing Cake

Can anyone advise the shelf life of a cake once it's been defrosted; I'm just talking a Vic sponge/choc sponge - nothing complicated & no icings or frostings on it! TIA

Its about the same as if it had never been frozen,(as for all foods), so plain sponge that you would keep or a few days when cooked fresh and tin stored r refidgerated will keep the same amount time after freezing and being defrosted

Thanks Chris. Can you advise if you can frost & ice a frozen cake with buttercream & fondant, or do you have to wait unti thawed?
Buttercream will freeze fine. Icing...not. To add to what Chris says although the keeping time is more or less the same it may come out with a dryer crust. I would recommend brushing with apricot jam if you are using a roll out fondant to ice it...to add the moisture back in .Enjoy!
Yep Anngel is ddead right icing will breack down if frozen, fondant will disolve in a fidge too, sugeust you cream and ice after defrosting.

As with fesh sponge you should damp the sponge with a little stock syrup befor decorating, the liquid from tinned fruit will also do, best applied hot,
