A good deep red wine with the beef, for cheaper options than a good French Bordeaux look at some Chilean wines such as their Merlots or Argentinian Malbecs - Italian Barolos would go as well or a Montepulciano, but often that is more of an acquired taste.
Desert - the Tokaji or go for a Hunter's Hukapapa Riesling or if you want something lighter, a Moscato (e.g. Russolo Moscato Rosa or a Navarra Piedmonte Moscato)

If you can source a champers by the name of Gruet then do! I had it at a restaurant recently and it knocks spots off better known houses.
Btw, do you 'appen to have a Tanners by you? I had their Mud House Pinot Gris recently and it was fantastic. With its aromas of baked apple and custard and flavours of fleshy stone fruits it would make a perfect accompaniment to the parfait. Well worth the £12.49 price tag.
