Why doesn't halloumi cheese melt? Are there any other cheeses with similar properties?

Was just talking to a friend about this maxi.  I looked up a recipe and it said not to over cook as it gets too soft.  Also it is made from sheeps milk and so is proper feta cheese according to the site I was on to. 
There are a number of non-melting cheeses. Edam for example softens but doesn't lose it's shape. There are many more, but can't think of them right now.
