I've just been watching Masterchef and one of the chef's recipes included "picked peas". What else would you do with peas? I was waiting for one to say he was making "killed chicken".

I am no chef and am probably showing my ignorance but what is the alternative to "picked peas"?

there can be some hyperbole in product presentation, sq, nothing that any worthwhile AB cook/chef would ever do......

no idea - it's like pan-fried or oven-baked - I mean what else are you going to cook them in?!!!

Ah thanks but I suppose even tinned peas and pickled peas would have been picked though. Also surely, the mangetout has been picked unless the entire pea plant is in there.

Some of the descriptions make me laugh. One the other day was doing "oven baked" chicken. How else would he bake it?

For my lunch tomorrow, I might make myself a "knife cut" sandwich".

The first encounter a diner has with their food is the menu. Consequently the chef will want to go to great lengths to describe the food and make it sound as appealing as possible. Unfortunately this often involves overly complex explanations, tautological descriptions and my bug bear.....spelling errors.

And to answer your question in the kitchen 'picking' means to pick over, to select the best produce.

Sea Bass irritates me... in my years working on coastal fish populations we never came across Sea Bass and none of tne local fishermen or anglers did either and they weren't mentioned in scientific tomes. Possibly because since there aren't any Freshwater Bass in European waters, so to stick the word 'Sea' in front of 'Bass' is un-necessary. Now Bream are something different, they are just 'Bream', not Sea Bream which is strange because I never know whether they are referring to Freshwater Bream or the ones that live in the sea alongside Bass.

I believe sea bass is used to distinguish it from double bass which takes much longer to 'pan fry'....... ;-)

Bass isn't difficult to fry if you remove the crown cork first and use it to make some fritters. So for double bass....

Does it mean they take the skins off? I love Masterchef. So much better than Lloyd Grossman. Something about the way Michel says "delicious" just does it for me. My daughter in law calls it food porn...not far wrong. Although as an antidote, go to youtube and put in "buttery biscuit base". Someone has made a rap of Greg using one of his favourite phrases. Priceless!
